Violations cited in this report must be corrected within the time frames below.
*1 *There is no food safety manager certified by this Department (CFSM) on duty as required. A CFSM must be on duty at all times the facility is open and/or food is being prepared. A completed application(SA-71)for CFSM, or proof of enrollment in an approved safety class must be submitted to the Department.  Repeat Violation.
*13 *Scoop was resting in the ice of the ice machine with the handle touching the ice. Always hang the scoop on the hook inside the machine to protect the ice from contamination.  New Violation.
*20 *The front undermount refrigeration unit has an ambient temperature measuring 48ºF.
This unit may not hold any TCS products until it has been serviced and maintaining ambient temperatures of 41ºF or below.
 New Violation.
*20 *Half and Half, and Mango cubes were maintaining poor product temperatures of 48ºF.
Time/temperature control for safety (TCS) food must be cold held at or below 41ºF.
Both of these items were discarded.

38 Food workers are not wearing hair restraints as required.
Employees shall wear hair restraints such as hats, hair coverings or nets, that are effectively designed and worn to keep their hair from contacting exposed food; clean equipment, utensils and linens; and unwrapped single-service and single-use articles.  New Violation.
46 Facility does not have test strips for both the 3-compartment sink, and the warewasher. A test kit or other device that accurately measures the concentration in mg/L or ppm of sanitizing solutions shall be provided.  New Violation.
